Francesco Mazzei’s Beginners’ Recipe for Making Pizza Margherita
Chef champions southern Italian cooking and this meal is not as easy as it looks.
Francesco Mazzei is one of Italy’s finest exports, with London restaurants that cover the range from fine dining at Sartoria to more-casual neighborhood trattorias Radici and Fiume.
He’s a fantastic chef whom I have admired since I first tasted his cooking (at St. Alban restaurant) in 2006. One time, we traveled together to try the pizzas of his native Calabria on a journey right across the south of Italy.
